I love having a vegetable garden every summer. The time spent outside with my kids, tending to the veggies and the fresh addition they bring to our dinner… ahhh. Tomatoes are definitely a family favorite of ours, so I thought I’d share some of our favorite tomato dishes with you to spark your culinary creativity while your veggies grow!
This dish is one I grew up on and makes me think of cookouts on the porch at my parent’s house! So many good memories and such a delicious side dish. If you’ve never had tomato pie, its eaten warm, has a creamy, quiche texture with cheese sprinkled on top (winning!). It’s one of those sweet, fresh recipes that’s practically heaven!
Simply chopping a fresh tomato and adding to my green salad makes it so much sweeter, but I also love making pasta salads and cucumber salads with some fresh tomato cubes thrown into it.
There’s nothing the kids love more than making pizza at home, but for the adults… homemade sauce with veggies from the garden puts the flavor over the top! Any recipe on Pinterest I’ve tried has been delicious!
Our family has a salsa recipe that’s been perfected over the years and passed down so if I told you… I’d have to kill you. Jk, more like it would be the end of me for giving away the secret!! But there are so many recipes out there with a variety of flavors and it’s easier to make than you may think. Definitely worth trying this summer!
I’ve heard that there’s nothing like a tomato and mayo sandwich… but I may just have to take your word on that one! No matter how you enjoy them, I hope you summer produce is bountiful, delicious and nutritious.
